My dad didn’t do a lot of cooking when I was growing up, but he was known for his out-of-this-world pumpkin bread. Every Christmas he would spend an entire day in the kitchen making loaves and loves of this delicious treat! When I asked him if I could post his recipe he told me that he actually got the recipe from an old family friend. So Sue, THANKS!!!
Here is what you will need:
- 4 Eggs
- 3 cups sugar
- 1 cup oil
- 1 can pumpkin (16 ounces)
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2/3 cup water
Put the eggs, sugar, oil and pumpkin in a mixer.
Mix well until all the ingredients are completely combined.
Add the flour, salt, baking soda, cinnamon, nutmeg and water. Mix until well blended.
Pour your pumpkin bread into well-greased bread pans. (This recipe will make 2 large loaves, 1 large and 4 small or 1 large and 2 medium loaves.)
Bake on 350 degrees. Small loves need 45 minutes, medium loaves 50 minutes and large loaves 1 hour.
